chore(stock): remove ledger characterization scaffolding
Phase 0 golden-master safety net for the stock_controller refactor. It served its purpose (every extraction verified byte-identical GL + Stock Ledger output) and is removed before shipping, mirroring the earlier GL characterization cleanup.
